This yummy, crunchy-creamy parfait with a kiss of sweetness and bursts of refreshing berries is a wholesome breakfast that is void of bad fat and won’t cause disastrous spikes in blood sugar. The secret ingredient is ground chia seeds, which provide protein, fiber, antioxidants, and omega-3. it will energize you throughout the morning without any hunger pangs or a drop in blood sugar. Berries are considered a superfood, too. Densely dark-colored blackberries are loaded with flavanols, high-powered antioxidants that research indicates may enhance daily mental performance and protect the brain from dementia. Mix them with other berries to work synergistically in increasing their antioxidant effects in fighting free radicals.
Yogurt Breakfast Parfait
3/4 cup nonfat Greek yogurt
1/4 teaspoon pure vanilla extract
1 cup blackberries or a mix of berries
1 heaping tablespoon coarsely chopped raw pecans
1 heaping tablespoon ground chia seed (grind 1/2 cup whole seeds in blender or coffee grinder)
1 tablespoon raw oat bran or raw wheat germ
Thoroughly combine the yogurt and vanilla in a small bowl. Reserve 3 berries and a few nuts to top off the parfait. in a tall wine or parfait glass, layer with 1/3 cup berries, a few nuts, 2 tablespoons of yogurt, a sprinkling of chia and oat bran or wheat germ, and 2 more tablespoons of yogurt. Repeat 2 times. Top with the reserved berries and nuts.
